I was going through some low carbs recipes that I had bookmarked to try in the future and since it was a cold day here, hubby asleep after working all night and shoveling out the path for the oil man to get all the way around the house to deliver our oil. I decided to make us some cookies. Have you seen this low carb site? Linda's Low Carb Menus & Recipes. They have lots of recipes that I have adapted to what I had on hand or what met our needs. This one is under the desserts section.
1 cup flax meal
1/4 cup unsweetened cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs
1/2 cup sugar free syrup (I used the chocolate syrup and the caramel syrup)
I made one batch of chocolate /chocolate and one batch chocolate/caramel. Can you tell by the picture which is which? Neither can I - I like the chocolate/caramel the best with a nice cup of Scottish Breakfast tea it was a great way to end our day while I sat working on the quilt. The sugar free syrups I can find at our local Target and the Flaxseed meal was at our local food store in the health section. These cookies are more cake like than cookie like but still very good.
