Recipe of the Week: Oven Bake Burger Sausage Scramble

We had the pleasure of having some company the other week and I made them a Low Carb Breakfast while they were here.  Easy, filling, and low carb was just want we all needed for a gray rainy day that was going to be busy!  The original recipe comes from Mr. Breakfast but of course I changed it up and made it mine own.

Oven Bake Burger Sausage Scramble 
(Serves 2)
1/2 pound ground beef
1/4 pound of sausage (I used sausage links but ground would work as well) 
1/2 onion chopped fine
3 ounces cream cheese
3 large eggs
1 tablespoon water
Salt and pepper to taste

Brown ground beef and sausage with the onion, drain off fat. 




 Spray the sides and bottom of a casserole dish and set aside.  Put the meat mixture back into the pan and add the cream cheese.  Cook on low until the cheese is mixed in well and melted.  Place into the casserole dish.  In a separate bowl, beat eggs with water and pour over the meat mixture.



 Bake all in a preheated 400 degree oven for about 30 minutes.  enjoy!  I made enough for 8 so we have some for this week or next (it freezes well). Total count comes to 3 per serving!  And it will really stick to your ribs. Company really liked it!!
