While reading Facebook the other day, over and over again I read variations of "Diet starts this week!"
Well, I so understand that feeling! For all of you out there I say "Go After that New Life Style."And to help you out here is one of my recipes.
I really like Cauliflower, don't you? I really like how low it is in carbs so I played around with it and came up with this recipe. I hope you try it and that you like it as well.
1 head of Cauliflower
Salt and Pepper to taste
4 Strips of bacon cooked and broken up
1/2 stick of butter
4 ozs Cheddar Cheese shredded (I used Vermont Sharp)
4 teaspoons Italian seasonings
Boil the Cauliflower until it's almost fully cooked, drain and mix everything else in. Place all in a greased casserole dish and place under the broiler until the cheese melts. Serves 4.
Each 1 cup serving has 1 carb!
You can mix this up by adding chives instead of the Italian seasonings and top each serving with sour cream or ranch dressing but add the carbs of the dressing.
